4 pcs. tilapia fillet 1 can coconut milk 1 tbsp. ginger cut into strips 1 med. onion, sliced 3 cloves garlic, finely chopped

2 cups fresh spinach 2 tbsp. fish sauce 1 sm. red bell pepper 2 tbs. lemon juice 1 tbsp. chopped spring onion cooking oil flour to dredge salt and pepper

Instructions: Marinate the fish in lemon juice for 15 mins. then sprinkle the fish with a pinch of salt and pepper. Then dredge with flour.
Pan fry until golden brown. Set aside.
In a shallow pan, saute the garlic, onion and ginger. Add the coconut milk, simmer for 10 mins. or until it begins to thicken. Add the spinach and the bell pepper. Season with fish sauce. Simmer for another 5 mins. until the sauce is thick. Pour over the fillet. Garnich with chopped spring onion. |
