1/2 kl beef short ribs, cut into 1-2 inch pieces 2 cups water 1/4 cup soy sauce 2 Tbsp sugar 1 garlic head, minced

1 tspn fresh ginger, minced 2 Tbsp sesame seeds 1/4 tspn Hot pepper sauce or hot pepper oil 1/2 tspn Ground Black Pepper 1 carrot, sliced

Instructions: In a medium pot over high heat, combine all ingredients execpt Carrots and 1 Tbsp Sesame Seeds. Stir to combine thoroughly. Bring to a boil, then cover and simmer for 2-3 hours, or until beef becomes tender.
When beef is tender, turn off heat, when stew cools a little, oil is separated from the sauce. At this stage, you can use a spoon or a ladle to remove as much of the excess oil as you can for a healthier meal, but leave a little oil in as this dish is not Korean Beef Stew without a little oil.
After removing oil, turn heat on again, drop carrots and remaing 1 Tbsp sesame seeds into stew and bring to a boil again. For more sauce, add 1/4 cup water or beef stock into stew.
Remove from heat and serve. |

Serve hot with braised togue and clear beef broth.

I used 1 head garlic as the garlic we get here is not that strong, but if you are using native garlic that has a strong flavor, reduce garlic to 1/2 head.
