1 1/2 ozs, butter 16-20 ozs milk 1 1/2 lbs. boiled fish or prawns

1 1/2 ozs. flour 4 ozs. grated cheese 10 ozs. creamed potatoes onion, capsicum

Instructions: melt the fat and add the flour, stir over low flame until the roux is cooked. avoid browning. take off the fire, add the milk gradually to avoid lumps, stir all the time.
return to fire until the sauce is thick. remove from the fire and add grated cheese. cook 2 dessertspoons each of chopped onion and capsicum chillies in fat added to the sauce. Mix with ,ashed potatoes and pile the creamed fish/ prawns mixture in the center. |
