1 kilo clams boiled in 2 cups water(broth reserved and shells discarded 1 kilo mussels boiled in 2 cups water and shells discarded) 1/4 k. peeled shrimps 2 pcs. white squid cleaned & cut into small pieces 1/4 k. of any white-fleshed fish cubed 1/4 cup butter 1/4 cup oil

1k. bamboo shoots blanched in water drained 2 cups cubed singkamas or water chestnuts 2 cups diced thinly dried mushrooms chinese or any mushroom dispersed in water for 30 mins. drained 2 pcs. medium carrots thin julienned 4 squares tokwa cut into cubes 1/2 kilo sili espada diced thinly 1 bigkis tanglad or lemon grass 1 cup white vinegar or 1 250 g pack knorr sinigang mix 4 pcs. knorr cubes 1 cup white wine 1/2 cup each all-purpose flour and cornstarch dispersed in 1 cup water Salt n pepper to taste 1/4 cup onions 1/4 cup garlic 1/4 cup thinly sliced

Instructions: Sautee ginger,onions and garlic in butter and oil until translucent. Add knorr cubes then drop the shrimps,squids, mushrooms, bamboo shoots, water chestnuts or singkamas, carrots and diced siling espada, cover and let simmer to blend flavors together for 2 mins., then pur 1 cup of white wine. Add 10 cups of water including the liquid from the clams and mussels,drop the lemon grass let boil for 2 mins., add salt and pepper to taste. Add cornstarch and flour mixture to thicken, then drop tokwa, clams and mussel meats and finish the dish with a cup of vinegar or a pack of sinigang mix. Adjust sourness and spicyness according to desired level. Discard lemon grass. |

| Serving Suggestion: |
Pour on large decorative soup bowl and garnish with sili espada. Provide individual bowls for the guests to help themselves. Be sure to tell your guests that the dish is quite a stinger. . .
