Instructions: 1. peel potato. slice into bite size.
2. put potat in a casserole, sprinkle with salt. put to a boil. reduce heat. cook until tender.
3. when cooked, drain excess water. reduce heat, mix in the cream, 4 tbsp of cheese (add if desired). stir until cheese is totally melted.
4. put i a serving dish.
5. top with the remaining cheese and chopped parsley
