1 large milkfish 1 small can pork and beans, pounded, save sauce. 1 Tbp raisins

1 small carrot, peepled & grated salt & pepper cornstarch

Instructions: 1. Slit the back of the fish and carefully remove the back & belly bones using kitchen scissors & tweezers. keep the head & tail intact.
2. Fillet the fish, carefully from the skin. Keeping the fish skin whole. Place the fish meat in a mixing bowl.
3. Add the rest of the fishmeat (except the pork & beans sauce) into a mixture. Stuff inside the fish. Sew the back of the fish using cotton strings (pisi).
4. Roast fish in oven or charcoal until done.
5. to make sweet& spicy sauce, thicken pork & bean sauce in little cornstarch over low fire . Add chili.
