? kilo red kidney beans ? cup olive oil (corn oil) 4 bulbs garlic, pealed and crushed 4 med white onions, pealed and sliced 1 kilo ground round (or ? kilo lean ground pork and ? kilo ground beef) ? cup thinly sliced chorizo de bilbao 1 teaspoon ground pepper 1 teaspoon ground chili powder ? teaspoon thyme ? teaspoon oregano

? teaspoon paprika 500ml sachet tomato sauce ? cup all-purpose cream 2 med red onions, pealed and diced 2 med green and red bell peppers, cubed 4 stalks celery, minced brown sugar to taste rock salt to taste 1 teaspoon Italian seasoning

Instructions: 1. Soak red kidney beans in triple amount of water 10-12 hrs before cooking time.
2. Warm oil in a large pan.
3. Saut? garlic till light brown and white onions till transparent.
4. Put in meat. Add chorizo, chili powder, thyme, oregano and paprika. Stir constantly till brown. Remove excess fat using a spoon.
5. Pour in tomato sauce and mix thoroughly.
6. Drain kidney beans (save water) and fold in mixture. Add soaking water till desired consistency of sauce is achieved.
7. Boil for 11 minutes stirring constantly bottom of pan to avoid burning.
8. Bring fire to low and pour in all-purpose cream.
9. Drop in celery, red onions and bell peppers and mix.
10. Add brown sugar and salt to desired taste.
11. Add Italian seasoning, mix.
12. Simmer for three minutes constantly stirring bottom.
