3 tbsps.cooking oil 2 pounds beef stew meat, cut into 1-inch pieces 2 large cloves garlic, minced 3 cups water 1/4 cup dry red wine 1/4 cup tomato paste 2 tbsps brown sugar 2 tbsps red wine vinegar 1 1/2 salt

1 bay leaf 2 inches stick cinnamon 1 pound small whole onions, peeled 3 tbsps. cornstarch 3 tbsps cold water 1/2 cup walnut halves 1/4 pound feta cheese, coarsely crumbled, or muenster or Monterey Jack cheese, cubed

Instructions: In Dutch oven heat cooking oil. Add half of the beef, turning to brown on all sides; remove and set aside. Repeat with the remaining beef and the garlic Return all meat to pan. Add the 3 cupps water, the wine,tomato paste, sugar, vinegar, salt, bay leaf, and cinnamon. Bring to boiling; reduce heat. Cover and simmer 1- 2 1/2 hours. Add onions; simmer 30 minutes longer. Remove bay leaf and stick cinnamon. Combine cornstarch and the 3 tablespoons of cold water; add to stew. Return to boiling, stirring constantly; cook and stir 1- 2 more minutes more. To serve, sprinkle with walnuts and cheese.Makes 6 servings. |
