1kg (2.2lbs) potatoes 3 Tbs butter

1 tsp salt 2 Tbs milk

Instructions: Boil the unpeeled potatoes until semi-tender the day before preparation. Peel and grate, using a grater with fairly large holes. Heat the butter in a skillet. Add the potatoes and sprinkle with salt. Using a spatula, press into a round loaf. Sprinkle with milk and cover securely. Reduce the heat as soon as the potatoes begin to sizzle. Fry very slowly for another 30 minutes. During this time a brown crust will form. Cover the pan with a flat platter and flip the roesti onto it. |

In itself Roesti is a very somple dish, but the preparation takes some know how. it is improtant that the potatoes be cooked at least one day beforehand. They must be pressed together in the pan like a round loaf and covered with a soup bowl or a tightly fitting lid. Roesti must not be stirred, otherwise they will not form a crust.
