Left Ingredients:
1 lb shrimps, cut off antennae and eyes Salt and pepper to taste 1 tsp garlic powder 1/2 tsp Paprika

Right Ingredients:
1 cup rice flour OR cornstarch, or half cuf of each 1-2 eggwhites coarsely chopped green onions 1 jalapeno pepper, sliced and quickly deep fried vegetable oil for frying

Instructions: Wash and pat dry with paper towel the cleaned shrimps, set aside.
Beat eggwhites, add the shrimps, salt and pepper, paprika, chopped green onions, and garlic powder. Set aside.
In a separate bowl, add the rice flour and/or cornstarch, season with salt, pepper - to taste, garlic powder and paprika.
Shake off excess liquid/batter from shrimps and dredge in seasoned flour.
Heat up vegetable oil (to test temperature of oil, drop a small amount of flour, if it sizzle right away, oil is ready. Add shrimps a few at a time as temperature will drop quickly and shrimps will get saggy. Fry shrimps until light brown. Top fried shrimps with fried jalapeno peppers and add more chopped green onions for garnish, if desired. |
