1 (375 ml) can evaporated milk 1 cup white sugar 2 egg yolks

1 whole egg finely grated zest of 2 native limes (dayap)

Instructions: Measure half a cup of sugar and caramelize in a heavy pan. Line a medium "llanera" (aluminum flan mold) with the prepared caramel. For the flan base, mix together the evaporated milk, egg yolks and whole egg, remaining 1/2 cup of sugar and grated "dayap" zest. Let the zest infuse into the flan base for 10 minutes or more. Strain the flan base into the caramel lined "llanera". Cover with foil and gently steam for 40 minutes or until the custard is set. Let cool in the "llanera" and invert onto a plate before serving. |
