1/2 cup All purpose flour 1/2 cup Cornstarch 1/3 cup Palabok (Shrimp Gravy) Mix 3/4 cup Water,cold 1 cup Kalabasa(squash) shredded 1/2 cup Carrots, shredded 1/4 cup Leeks, minced 1 pc Tokwa (tofu), cut into 1/2" deveined (optional) Cooking oil for frying

Instructions: To prepare the Batter:
In a mixing bowl, combine all purpose flour, cornstarch, Palabok( Shrimp Gravy) Mix and water Stir in squash carrots and leeks.
To form the fritters:
In a saucer, form batter mixture into small 2" patties. Top with a shrimp and 3 tofu cubes. Gently slide into pre-heated pan with 350 F (170 C)cooking oil andfry until golden brown, about 5 minutes. Drain off excess oil Continue process untill you ues up the batter mixture.
Serve hot with garlic dipping sauce.
To prepare the Garlic Dip :
In bowl, combine vinegar, garlic, black pepper, and salt. Stir Let stand for at least 20 minutes Reserve until needed. |
