6 cloves Garlic, peeled and chopped 15 stalks Shallots, peeled and chopped 10 cm Fresh turmeric, peeled and chopped 10 pieces Large red chilies, seeded and chopped 10 cm Ginger, peeled and chopped 1 tbsp Coriander seeds 1 tsp Dried shrimp paste (trasi) 4 tbsp Cooking oil 2 pieces Salam leaf 2 stalks Lemongrass, bruised 3 tbsp Tamarind pulp 1 piece Tomato, medium sized, skinned and seeded 10 pieces Candle nuts

Instructions: Grind or blend coarsely all ingredients except lemongrass, salam leaves, tamarind pulp and oil.
Heat oil in a wok and add the processed ingredients except tamarind and stir frequently over medium heat for approx 5 minutes pr until fragrant and golden in appearance.
Add tamarind, then remove from wok and set aside to cool |
